Long day at work and all I want to do is go home and eat something. They have exhausted their regular recipes for salmon, meat and potatoes and are looking for something to spice up your dinner. Well, read on.

Grilled Romaine Salad
 
4 heads romaine hearts, split
1/3 cup red wine vinegar
2/3 cup olive oil
1 Tbs. Garlic
3 anchovy filets
2 tsp. whole grain mustard
4 Grilled skinless chicken breast , sliced
 
1.       Combine vinegar, oil, garlic, anchovy and mustard in a blender. Blend on high.
2.       Brush romaine hearts with vinaigrette
3.       Grill over hot grill until just wilted
4.       Serve grilled chicken over romaine
 
If you are looking for an additional component to this recipe, you can add some parmesan cheese as it is low in fat.
