10 oz boneless chicken breasts / skinless, cut into 3/4 inch cubes
1 colive oil
2 tablespoonsfavorite barbecue sauce
For the pizza:

A thin crust dough recipe
Corn flour, cornmeal, or flour for handling
1/2 cup favorite barbecue sauce (spicy and sweet sauce works best)
2 tablespoonsgrated smoked Gouda cheese
2 cups shredded mozzarella cheese
1/4 small red onion, cut into 1/8-inch pieces
2 tablespoonschopped fresh cilantro chopped fresh


Step by Step
To make BBQ Chicken:

In a large skillet, cook chicken in olive oil over medium-high heat until cooked5-6 minutesDo not burn.
Set aside in refrigerator until chilled.
Once cooledcover the chicken with barbecue sauceset aside in the refrigerator.
To make the pizza:

Pizza stone square in center of oven and preheat to 500 degrees F.for an hour before cooking pizzas.
Using a large bucket barbecue sauce to extend uniformly over thesurface of the dough prepared inside of the tire.
Sprinkle over smoked Gouda sauce.
Cover with 3/4 cup shredded mozzarella cheese.
Arrange the chicken pieces evenly over the cheese.
Place the chopped red onion over the surface.
Sprinkle an additional cup 1/4 mozzarella cheese on top of pizza.
Transfer pizza to oven and bake until crust is golden and crispy andthe cheese in the center is bubbly, 8 to 10 minutes.
When the pizza is cooked, carefully remove from ovensprinkle 1 tablespooncilantro over the hot surface.
Cut and serve.
